Low FODMAP 2 Minute Noodles Recipe

There are many adjustments we all make in our shopping and cooking when shifting to a low FODMAP diet.  I think the one product I am asked most about is stock.  A couple of weeks ago I wrote about how I prepared chicken stock for soup.  I don’t think you can go past homemade stock of any variety for taste and certainty of what’s in it.  I make stock in large batches and freeze it in smaller portions for easy use.  But sometimes it is convenient to be able to grab a stock cube to add some quick flavour to a dish.  I have previously mentioned a stock paste that I like to use but unfortunately that product has been discontinued.  Thankfully, a kind reader has let me know about another product.

Massel 7s Stock Cubes are now available onion free.  In Australia Massel 7s stock cubes used to be a reliable option to include in our low FODMAP diet.  Unfortunately Massel changed their 7s recipe, not knowing that there were so many of us trying to avoid onion.  Word soon got around and Massel were inundated with emails and calls pleading with them to go back to the old recipe without onion.  And, YAY to Massel, they listened; the onion is out of the Chicken and Beef varieties!  I have been told they are also working on a Vegetable variety.

So I grabbed myself a couple of packs the other day to try out.  I noticed on the packaging “dehydrated vegetables” were listed.

To be sure this didn’t include onion I checked with Massel and here’s  the response:

“There are no other vegetables.”Dehydrated vegetable (Onion)” was supposed to be cancelled when Onion was removed from the formulation. In a hurry to release the new product to satisfy the customer demand we did notice the artist just removed the word (Onion) leaving dehydrated vegetable in place.  With the next packaging run the Dehydrate vegetable will be deleted.”

I also asked about availability outside Australia and was told that Massel 7s are available in the United States and Massel is looking at making them available on Amazon.

I’m not sure what I think about the disodium guanylate and inosinate included – it’s hard not to be a little suspicious of ingredients that are difficult to pronounce.  I know they are included for flavour.  I will leave it up to you to do some research and make your own decision.

As a reader has also pointed out, these stock cubes don’t cantain animal products and might give vegetarians a new stock option.

I decided to whip up a quick 2 minute noodle lunch with a cube of Massel 7s Chicken Stock.  I simmered some rice noodles, carrot, some frozen corn and bok choy in the stock, adding a little soy sauce and sesame oil for flavour.  Not bad for 2 minutes!

Feel free to use whichever low FODMAP vegies you have on hand, add some sliced chicken breast or maybe even prawns.  For a Thai twist use fish sauce instead of soy and add coriander and lime juice…yummo!

Low FODMAP 2 Minute Noodles Ingredients: 

  • 1 Massel 7s Chicken Stock cube, crumbled
  • 1 cup water (add another ½ cup if you like more broth)
  • 60g rice noodle vermicelli
  • 1 small carrot, finely chopped
  • 2 tablespoons corn kernels, fresh or frozen
  • ½ baby bok choy
  • soy sauce to taste
  • a few drops of sesame oil

Low FODMAP 2 Minute Noodles Steps

Combine stock cube and water in a smsall saucepan and bring to the boil.  Add the noodles, carrot and corn and simmer for 2 minutes.  Add the bok choy for the final 30 seconds of the cooking time.

Serve with a couple of teaspoons of soy sauce and a few drops of sesame oil over the top.
