Gluten free Weetbix Slice

I didn’t think I was going to get any photos for you before these treats disappeared! I had been asked to make something gluten free for a supper I was going to. After I left with my plate of slice, everyone at home must have had sample, too. The next day I made up another plate for a morning tea I was off to, and my family all grabbed some for their lunch boxes. You certainly have to be quick around here! Have you see the gluten free Weetbix on your supermarket shelves yet? They are a great addition to your breakfast options, but they also...

Mascarpone Cheesecake

Mascarpone Cheesecake

Last week I promised to show you what I made with my lactose free mascarpone cheese. I had considered making that to-die-for Italian dessert, Tiramisu. But we were heading for dinner at our friend’s new home, and decided the coffee flavours might not go so well with the 6 kids in our families. So a simple cheesecake it was.   After a bit of searching and cookbook browsing I settled in this Donna Hay recipe as my starting point. I’m not one for sticking to recipes word-for-word but didn’t make too many changes with this...

Lactose Free Mascarpone

It has been both interesting and at times exciting to watch the range of lactose free dairy products expand over the years. When I first discovered lactose was an issue for me, I could find UHT milk and cream, but that was about it. Now there is fresh milk in skim, low fat and full cream varieties. Fresh cream is also easy to find, although only reduced fat where I live. Cheddar cheese is available and the most exciting for me, lactose free ice cream! Even with all these great lactose free dairy products, there are still others I miss,...

Chocolate and Raspberry Dessert Cakes

There are many foods to give up or cut back on in a low FODMAP diet.  I miss apples and occasionally have a little nibble of one that a little person in my house has taken a juicy bite from.  Avoiding onions is no longer a big deal for me and I don’t like their taste all that much anymore.  But when it comes to chocolate…let’s just say there are some foods that are worth any trouble they might cause. With Easter just around the corner I have received a few enquiries about FODMAPs in chocolate.  I have never avoided chocolate,...

Shrove Tuesday Winners

Today is Shrove Tuesday.  “What is that about?” you might ask.  Well, I have done a little research to brush up on my understanding.  Shrove Tuesday falls the day before Ash Wednesday which is the first day of Lent.  Shrove Tuesday is traditionally a final day of celebration and feasting before the Lenten time of fasting and reflection. The other name for Shrove Tuesday you might also be familiar with is “Pancake Day.”  What’s the connection?  Cooking pancakes became a way to use up rich foods such as butter and eggs before...

Spiced-up Veg with Haloumi

I am trying to get my gears rolling after a wonderfully long break from everything.  I guess holidays can’t go on forever but, after our busy lead up to Christmas, I wouldn’t say no to a few more weeks.       We enjoyed our usual family holiday at the beach packed with surfing, sailing and, would you believe, I completed an 8km fun run with my 11 year old son!  I’ve been trying to get back into running with the help of a “Couch to 5k” app on my phone and the new running shoes I gave myself for...

Low FODMAP Vegie Burgers

Low FODMAP Vegie Burgers

I think I might have just eaten the best Vegie Burger I can remember tasting.  Fresh, flavourful, satisfying.  I know calling anything “the best” sets expectations high, and maybe I shouldn’t go there.  But I can’t remember even seeing a vegie burger that is also low FODMAP.  So, I am pleased with my Vegie Burger and I hope you enjoy it too. This all came about when I was handed the job of coordinating the catering for my Flynn’s year-6 graduation.  Our school likes to put on a special night of celebration for our finishing...

Lime Ice Cream

I have had these photos ready for a while, waiting for me to come write some words to go with them.  We took them over the school holidays when one of my boys decided to spend some time in the kitchen.  Flynn does enjoy cooking and can even prepare a family meal from time to time.  School holidays give him a chance to flick through our cookbooks and choose something new to have a go at.  This time he chose ice cream!   We love ice cream in our house, and I don’t use the word “love” flippantly.  I think we could all indulge...

Pumpkin, Feta and Chive Frittata

This past week has been a bit of a challenge.  I started out with a couple of sick kids at home, each with their own ailments to soothe.  There was lots of rest, fluids to keep drinking, and my fair share of washing to keep on top of.  But then… it got me… not just one of those ailments, but both.  No details needed here, but it meant a day sleeping through it and taking it pretty slow for the rest of the week.  Yesterday afternoon however, ended with a real treat… Our family’s school is bordered by a park on one side...
